You don’t have to be a vegan to enjoy this salad. Its full of delicious goodness!

Black Bean and Rice Salad with Creamy Lime Dressing
2 cups cooked rice
1 can black beans, drained and rinsed
2 cups chopped tomatoes
1 cup red bell pepper
1 cup whole corn kernels (frozen or fresh)
2 scallions, sliced
2 cups chopped lettuce 
Creamy Lime Dressing (recipe follows)
In a large bowl, combine all ingredients. Toss in Creamy Lime Dressing…..
Creamy Lime Dressing
2 tablespoons chopped cilantro leaves
1 tablespoon red wine vinegar
1 teaspoon lime zest
1/4 cup lime juice 
1/2 cup vegan sour cream                                               
1 garlic clove, crushed
1 tablespoon Agave Nectar
1/2 cup olive oil
Salt and pepper to taste
In a blender, blend all the ingredients except olive oil, salt and pepper until smooth. While machine is running, slowly drizzle in the oil until incorporated. Season with salt and pepper.
