In honor of Mother’s Day and my mom, I offer you her yummy CHILI. Of course, growing up, we used …. dare I say it…meat in the recipe. I now know, I can still have my childhood yumminess, made a lot healthier.

  • Vegan Meat Substitute (Beyond Meat is pretty yummy)
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 1 green pepper, chopped (totally optional)
  • 1 tablespoon chili
  • 1 tablespoon cumin
  • Salt & Pepper to taste
  • 1 large can whole tomatoes
  • 2 small cans tomato paste
  • 1 can kidney beans, drained and rinsed
  1. In a large pot, saute “meat”, onion and peppers in a small amount of oil until soft, add garlic and seasonings, saute about 3 minutes.
  2. Add 1 can of tomato paste with 2 cans of water. Stir and simmer 15 minutes.
  3. Add the other can of tomato paste, the whole can of UNDRAINED tomatoes (when in the pot, squish with your hands, be careful it will squirt everywhere!), and kidney beans.
  4. Let simmer with a partially covered lid 45 minutes.
  5. Scoop in a bowl and add “sour cream” and “cheese” and a sprinkle of minced onions, if you like.
  6. ENJOY!
