It was one of those nights last night. I was hungry, didn’t want to fuss, just couldn’t think what to make, until I looked in my fridge to see what I had. I’m not sure what to call this, this is what I made and it was so DELICIOUS! I served it with a mixed salad of tomatoes, beets and “Feta” cheese.
- 1 package Field Roast Apple Sage Sausage, sliced
- Cherry tomatoes (handful or as many as you want!)
- 1 sliced onion
- Brussel Sprouts (cooked first, I saute, then add a splash of vegetable broth, cover and simmer until soft)
- Spinach, chopped
- 1/4 cup of vegetable broth
- In a frying pan, brown the sausage, tomatoes and onions, add the Brussel sprouts, saute until nice and brown, add the spinach, broth, cover, and cook until spinach is wilted. Then ENJOY!
