It was one of those nights last night. I was hungry, didn’t want to fuss, just couldn’t think what to make, until I looked in my fridge to see what I had. I’m not sure what to call this, this is what I made and it was so DELICIOUS! I served it with a mixed salad of tomatoes, beets and “Feta” cheese.

  • 1 package Field Roast Apple Sage Sausage, sliced
  • Cherry tomatoes (handful or as many as you want!)
  • 1 sliced onion
  • Brussel Sprouts (cooked first, I saute, then add a splash of vegetable broth, cover and simmer until soft)
  • Spinach, chopped
  • 1/4 cup of vegetable broth
  • In a frying pan, brown the sausage, tomatoes and onions, add the Brussel sprouts, saute until nice and brown, add the spinach, broth, cover, and cook until spinach is wilted. Then ENJOY!
Sausage, tomatoes, Brussel sprouts and kale = YUM!
